The Muscat is a typical Alsatian wine usually associated with cocktails or with asparagus. It will also bring out the best in all of your spicy, sweet or salty wok dishes. It is the only kind of wine that keeps the true taste of the grape. It is a powerful and delicious fruitiness that will seduce the most refined palates. Unlike the Rivesalte Muscat, it will be vinified much drier in order to keep a more harmonious balance, for a more digest and lighter beveridge.
RECIPE IDEA, FOOD AND WINE PAIRING
Asparagus and its Parmesan Tile
20 green asparagus
20g coarse salt
For the tiles:
100g grated Parmigiano Reggiano
4 slices of raw ham
You can enjoy this dish at the restaurant l’Oignon à Strasbourg.
Peel the asparagus. wash the asparagus, then cook in boiling water with the coarse salt for 10 minutes, depending on their size.
Drain and reserve in a dish at room temperature.
In a bowl, combine oil, wine vinegar, pepper and a pinch of salt.
Preheat the oven to 210 ° C (item 7).
Make small piles of Parmesan cheese on a baking sheet and bake for about 5 minutes.
At the end of the oven, place on a rolling pin to give them a curved shape, and let them cool on it.
Serve asparagus and tiles with slices of raw hams.
