Only PDO wines having a blend of many grapes, the Edelzwicker is a simple wine for daily consummation.

Commonly used in cooking, to make Kirs or simply to be a simple glass of white wine, its fruitiness and its lightness will please you in every circumstance.

Vineyard pie

ingredients

For 4 people

250g of veal shoulder
250g of pork shoulder
2 puff pastries
30g shallots
5cl of Edelzwicker
1 branch of chervil
5 leaves of parsley
8 sprigs of chives
30cl of fresh cream
3 egg yolks
Salt
Pepper

You can enjoy this dish at the restaurant Hupsa pfannala à Saint-Hippolyte.

 

Finely chop the veal and slice the pork into small cubes.

Mince the shallots and the chervil, chives and parsley that you can dose according to your tastes

Marinate meat, wine and herbs for 8 to 12 hours in the fridge.

Preheat the oven to 200 ° C (thermostat 6/7). Spread the marinade over the puff pastry. On the second puff pastry, cut a circle in the center with a small cookie cutter and place it on the preparation. Seal the two pasta together and remove the excess. Be careful not to throw the end of the circle of dough.

Beat the egg yolks. Brush the top of the pasta with a brush to brown it without forgetting the lid. Put everything in the oven at 200 ° C (thermostat 6/7) for 30 min

While cooking, beat the egg yolks with the cream to obtain a flan. You can season it slightly according to your tastes. Pour the flan into the well and rest the lid on it.

Put back in the oven for 20 minutes to finish cooking.
