White Sparkling Wine

The subtle assemblage of Riesling for its fresh touch of Pinot Blanc for its fruity aromas of pear and apple, this sparkling wine brut but not sour with very delicate fizz will please you as much as a cocktail accompanied with toasts or as a dessert so to end a meal on a light touch.


Aperitif with a Flammekueche


  • 1kg Flour type 45
    10g fresh baker’s yeast
    50cl of water
    50g of extra-fine butter or churn
    5g of salt
    1kg 40% white cheese
    250g thick fresh cream 30%
    500g of onions
    500g smoked bacon sliced or bacon

Put 50cl of the water and add the yeast (10 gr) and dissolve it.
Mix the flour, water and salt.
Using a robot and a dough hook, mix the flour, water, dissolved yeast, and salt to obtain a ball of dough.
Add a little water if necessary to form the ball of dough.

Add softened butter to the dough.

Mix the preparation.

Beat the mixture to obtain a smooth ball, cover with a towel and let stand for 1 hour

Mince onions.
In a skillet, sauté the onions.
Cut the bacon cubes into cubes.
Mix the cottage cheese, cream, salt, pepper and nutmeg.
Put 3 good spoons of filling on the pie shell.
Spread the onions and bacon on the filling.

Cook the flambé tart for 8-9 minutes in a 250 ° oven.
